Look for heavy squash with thick rinds and no soft spots. The deeper colored flesh indicates a sweeter squash.

Store in a cool, dry place such as a basement. If stored in these conditions, squash will keep for several months.
Preparing Tips
Most fall and winter squash can be used interchangeably in different recipes. Winter squash is perfect for soups and is also great cubed and roasted. If you still have squash left over from the summer with tough skin and dry flesh, it can be used for stuffing and baking. Leftover summer spaghetti squash is a healthy substitute for pasta and also makes a delicious side dish.
