What you'll need:
- boucheron goat cheese
- 4 ounce can Adobo sauce
- cilantro
- red onion
- mango
- roast chicken
- 8 corn tortillas
- 8 pieces butchers twine
- 4 - Fire & Flavor 6 x 9.5' Cedar Papers

Tacos
8 - 6" flour tortillas
1 roast chicken (about 2 1/2 pounds), pulled
8 ounces Boucheron goat cheese
2 ounces Adobo chili sauce
4 - Fire & Flavor 6 x 9.5" Cedar Papers
8 - 12" pieces butchers twine
Mango Salsa
1 mango, skinned, seeded, and chopped
1 tablespoon cilantro, chopped
2 tablespoons red onion, chopped
FIRST Soak butchers twine. Pull chicken from the bone and shred in large pieces. Place shredded chicken in a bowl, add Adobo sauce and squeeze the peppers from the sauce. Toss chicken with sauce (add less Adobo sauce for mild)
NEXT In a small bowl, mix chopped mango, cilantro, and red onion. Mix well and set aside.
LAST Heat grill to 400 degrees. Spray each tortilla with non-stick cooking spray. Place two tortillas, greased side down, on each cedar paper; add desired amount of chicken and boucheron cheese. Roll the tacos, then wrap cedar papers around them. Tie with butchers twine and repeat. Cook on all sides for 10 minutes. Remove from grill and add salsa. Serve immediately.
