Cedar Wrapped Halibut with Citrus Pesto
Cedar Wraps are the perfect way to add moisture to fish and a subtle smokey flavor. We also love this pesto tossed with pasta or on grilled chicken. Try this simple recipe for Cedar Wrapped Halibut.
PREP TIME: 10 minutes + soak
COOK TIME: 7 minutes
YIELDS: 4 servings
Pesto:
½ cup fresh spinach leaves, packed
½ cup fresh arugula
¼ cup walnuts
1 clove garlic
2 tablespoons lemon zest
2 tablespoons lemon juice
2 tablespoons orange zest
2 tablespoons orange juice
¼ cup grated Parmesan cheese
¼ cup olive oil
Halibut:
4 (6 ounce) halibut fillets
4 Fire & Flavor Cedar Wraps, soaked
Lemon wedges to serve
FIRST Prepare pesto by combining spinach through Parmesan cheese in a food processor or blender and process until finely. With processor on, slowly drizzle oil through food shoot, continuing to process until well blended. Season to taste with salt and pepper and set aside.
NEXT Preheat grill or grill pan to medium heat, about 400°F. Place fish fillets in center of cedar papers; season with salt and freshly ground black pepper. Fold paper edges towards each other and secure with cotton string. Place on grill, seam side down, and cook for 4 minutes per side or until fish is cooked through.
LAST Remove fish from grill using tongs and serve with a dollop of pesto.
