Summer Grilled Corn with Feta and Lime

Summer Grilled Corn with Feta and Lime

Prep Time:  15 minutes + soaking
Cook Time:  15 minutes
Yields:  6 servings

6 ears fresh, sweet corn
2 tablespoons butter, melted
3 tablespoons Fire & Flavor Salmon Rub
½ cup crumbled Queso Fresco or feta cheese
1 lime, cut into wedges

FIRST  Preheat grill to medium-high heat. Pull husks back away from corn, but leave  husks intact. Remove silk from corn and pull husks back over corn. Soak corn in water for 30 minutes. Place on grill and cook until husks are charred and kernels are tender, about 7 minutes on each side.

LAST  Allow corn to cool slightly, pull husks back and brush with melted butter. Sprinkle rub over corn on all sides, arrange on platter and top with crumbled cheese.  Serve grilled corn with fresh lime wedges.
