Cedar Planked Filet with Fresh Rosemary

Prep Time: 10 minutes plus rest time
Cook Time: 15 minutes
Yields: 2 servings

Ingredients:
2 (6-8 ounce) beef filets
1 teaspoon olive oil
1 teaspoon Fire & Flavor Steak Rub
2 (6-inch) sprigs fresh rosemary
1 – Fire & Flavor Cedar Grilling Plank, soaked
Cotton string for tying

FIRST  Rub filets all over with olive oil and sprinkle evenly with Steak Rub. Wrap each filet with rosemary sprig and secure with cotton string. Allow to sit at room temperature for 30 minutes.

NEXT  Preheat grill to medium-high heat. Sear fillets for 2 minutes per side. Reduce grill temperature (or move plank to cooler side of grill) to medium-low. Place plank on grill and transfer filets to plank. Close lid and continue to cook for about 10 minutes or until meat thermometer inserted in filet registers 125°F for medium-rare (steak will continue to cook after removing from grill).

LAST  Remove plank and meat from grill. Allow steaks to rest for 10 minutes before serving.
