Planked Beef Filet with Spiced Blue Cheese

Prep Time: 10 minutes
Cook Time: about 20 minutes
Yields: 6 servings

Topping:
¼ purchased plain breadcrumbs
6 tablespoons blue cheese, crumbled
¼ cup fresh parsley, chopped
2 teaspoons Worcestershire
2 teaspoons olive oil

Fillet:
6 (6-8 ounce) beef fillets
1 or 2 Fire & Flavor Cedar Grilling Planks, soaked

FIRST Preheat grill to high heat and make sure grill grates are clean. If using a charcoal grill, build hot fire on one side of grill only, leaving cooler side for plank grilling. In a small bowl, combine topping ingredients with a fork and season to taste with freshly ground black pepper.

NEXT  Season fillets with kosher salt and freshly ground black pepper. Sear fillets on hot side of grill for 3 minutes per side or until grill marks form.

LAST  Reduce grill temperature to medium-low about 350°F and place plank on grill (place plank on cooler side of grill if using charcoal grill). Heat plank for 3 minutes, flip using tongs, and place fillets directly on plank. Top each fillet with blue cheese mixture, close lid, and cook an additional 12-16 minutes or until desired doneness. A meat thermometer inserted in center of fillet should read 125°F for rare, 130°F for medium rare and 145°F for medium well. Allow meat to rest for 3 minutes before serving.
