Portobello Swiss Burgers
Prep Time: 15 minutes
Cook Time: 10 minutes
Yields: 4 burgers
Ingredients:
2 pounds ground chuck or sirloin
1 ½ tablespoons Fire & Flavor Burger Rub
½ teaspoon salt
2 portobello mushroom caps
2 tablespoons balsamic vinegar
2 tablespoon olive oil
1 clove garlic, minced
4 slices Swiss cheese
Optional:
4 hamburger buns
1-2 ripe tomatoes, sliced
1 ½ cups fresh arugula
Whole grain mustard
FIRST Using hands, combine sirloin, Burger Rub, and salt. Form into 4 patties and allow to sit at room temperature for 10 minutes. Combine vinegar, olive oil, and garlic in a large zip-top plastic bag. Add mushrooms, tossing to coat, and allow to marinate while grill preheats.
NEXT Preheat grill to medium-high heat. Grill burgers for 3-4 minutes per side for medium-rare. Place cheese on burgers the last minute of cooking. Grill mushrooms for 4-5 minutes, flip and continue to cook for an additional 2 minutes or until tender. Remove from grill and slice into ½-inch slices.
LAST To serve, place burgers on buns, top with mushrooms, arugula, and tomato. Serve with whole grain mustard.
