Yields: 4 servings
¾ cup leftover cranberry chutney
1 small Granny Smith apple, diced
1 small jalapeno, minced
2 tablespoons fresh lime juice
2 tablespoons roughly chopped cilantro
8 (6-inch) corn or flour tortillas
½ cup sour cream
1 ½ cup shredded leftover turkey or chicken
1 avocado, diced
½ cup crumbled queso fresco or goat cheese
Shredded lettuce to garnish
FIRST Preheat oven to 350°F. In a medium bowl, combine chutney, apple, jalapeno, lime juice, and cilantro. Season with salt to taste and set aside.
NEXT Wrap tortillas in aluminum foil and place in oven to heat. Spread each tortilla with 1 tablespoon sour cream, top with shredded turkey, diced avocado, and spoonful of cranberry salsa.
LAST Garnish tacos with cheese and lettuce and serve immediately.
