Asian Chicken with Peanut Soba Noodles

Yields: 4 servings

Chicken:
2 (6-ounce) boneless, skinless chicken breasts
2 tablespoons low-sodium soy sauce
1½ teaspoons Fire & Flavor Asian Rub
1 tablespoon olive oil

Peanut Soba Noodles:
12 ounces broccoli florets
2 teaspoons olive oil
1 carrot, shaved into ribbons
1 – (8 ounce) package uncooked soba noodles
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 tablespoons sesame oil
1 teaspoon brown sugar
1½ tablespoons peanut butter
1 teaspoon fresh ginger

FIRST  Combine soy sauce, Asian rub, and olive oil and drizzle over chicken, tossing to coat both sides. Allow to marinate for 15 minutes or longer if desired. Preheat grill or grill pan to medium-high heat. Grill Chicken for 5 minutes per side or until internal temperature reaches 165°F on a meat thermometer. Allow to rest for 10 minutes before slicing.

NEXT  While chicken is cooking, preheat oven to broil. Toss broccoli with olive oil and spread in an even layer on a rimmed baking sheet coated with cooking spray. Broil six inches from heat source, until edges begin to brown, about 4 minutes. Toss and continue cooking for an additional 4 minutes or until crisp tender.

LAST  Cook soba noodles according to package directions. While noodles are cooking, combine vinegar, soy sauce, and remaining ingredients (through ginger) in a small bowl. Drain noodles, reserving ¼ cup cooking liquid. Return noodles to pot and toss with peanut butter mixture, adding a little pasta water, if needed. Toss noodles with roasted broccoli and carrots, top with chicken, and garnish with crushed peanuts, if desired.
