Asian Marinated Salmon with Pickled Cucumbers

Fresh and flavorful, this dish is a family favorite. Serve with pickled cucumbers and a summer salad for lunch or family dinner.


PREP TIME: 35 minutes
COOK TIME: 15 minutes
YIELDS: 4 servings

Marinade:
2 tablespoons lime juice
1 tablespoon olive oil
1 ½ tablespoons honey
1 1/2 tablespoons Fire & Flavor Asian Rub
1 teaspoon sesame oil

Salmon & Cucumbers:
3 tablespoons rice wine vinegar
½ teaspoon sugar
1/8 teaspoon red pepper flakes
1 cup cucumbers, thinly sliced
4 – 6 ounce salmon fillets or steaks

FIRST  Combine lime juice, olive oil, honey, rub, and sesame oil in a small bowl. Place salmon fillets in a glass baking dish and drizzle with marinade, making sure all sides are coated. Marinate in refrigerator for 30 minutes.

NEXT  In a medium bowl, combine vinegar, sugar, and cucumbers. Place in refrigerator to marinate while salmon is grilling.

LAST  Preheat grill or broiler to medium-high heat, about 425°F. Grill salmon for about 3-4 minutes per side or until medium to medium-well; serve with pickled cucumbers.
