Cedar Wrapped Shrimp Tacos with Avocado Sauce

Cook Time: 10 minutes
Yields: 4 servings

Shrimp
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1 tablespoon Fire & Flavor Salmon Rub

Garnish
1 avocado
2 cloves of roasted garlic
2 tablespoons of lime juice
½ cup mayo or yogurt
pinch of salt
1 cup cabbage, finely chopped
2- 3 radishes, thinly sliced
8 flour tortillas

FIRST  Soak cedar papers in shallow pan of water and heat grill. While the grill is preheating and papers are soaking, toss shrimp in oil and Salmon Rub.

NEXT  Combine avocado, garlic, lime juice, mayo, and salt in food processor until evenly mixed. Chop cabbage and slice radishes. Remove cedar papers from water and place 4 ounces of shrimp on each paper. Roll along the grain and tie with included string. Repeat until all of the shrimp wrapped.

LAST  When grill reaches medium-high heat, place cedar wrapped shrimp over direct heat for about 6 min or until shrimp becomes opaque. Remove from heat and place tortillas on the grill for 5-10 seconds, just until hot. Then assemble tacos using any extra lime to squeeze on top.
