Yields: 4 servings
2 cups peeled and chopped peaches
1 avocado, diced
½ cup grape tomatoes, halved
2 tablespoons fresh cilantro, chopped
2 tablespoons lime juice
2 teaspoons Fire & Flavor Salmon Rub
1 ½ teaspoons olive oil
4 (6-8 ounce) salmon fillets
Lime wedges for serving
FIRST In a medium bowl, combine peaches, avocado, tomatoes, cilantro, and lime juice. Season with salt to taste and set aside.
NEXT Preheat grill to medium-high heat. Drizzle salmon fillets with olive oil and sprinkle evenly with Salmon Rub. Grill, flesh side down, for 4 minutes or until salmon does not stick. Turn fillets over and grill for and additional 4 minutes or until slightly opaque in center.
LAST Serve grilled salmon with salsa and lime wedges.
