Planked Pork Tenderloin

Prep Time: 20 minutes + soak
Cook Time: 20 minutes
Yield: 6 servings

Sauce:
½ cup hoisin sauce
¼ cup rice wine vinegar
¼ cup brown sugar
1 tablespoon sesame oil
2 large garlic cloves, crushed
1½ teaspoons fresh grated ginger
red pepper flakes to taste

Pork:
2 - ¾ pound pork tenderloins, trimmed
1 - Fire & Flavor Cedar Grilling Plank, soaked

FIRST  In a small saucepan combine sauce ingredients and cook over medium heat for 4-5 minutes. Remove from heat and cool slightly. Set aside ½ cup of sauce for serving and place remaining sauce in a large zip top bag.

NEXT  Add pork to zip top plastic bag and marinate for 15-30 minutes; While pork is marinating, preheat grill to medium-low heat or 350°F. Remove pork from bag and discard remaining marinade. *For faster cooking, pork can be seared directly on the grill for 2 minutes per side and then transferred to heated plank.

LAST  Place soaked plank on hot grill, close lid, and allow to heat for 3 minutes. Flip plank and place pork on heated side of plank. Grill with lid closed for 15-20 minutes, or until pork reaches an internal temperature of 145°F. Remove pork and plank from grill. Tent pork loosely with foil and allow to rest for 5 minutes; Slice and serve with reserved sauce.
