Planked Salmon with Strawberry Avocado Salsa

When fresh strawberries are in season, you can't beat this beautiful dish. Full of flavor and vitamins, this spin on traditional planked salmon is one of our favorites! 


Prep Time: 15 minutes + soak 
Cook Time: 15 minutes 
Yields: 4 servings 

Salsa:
2 cups sliced strawberries
2 tablespoons finely chopped shallot
1 avocado, peeled and diced
Juice of 1 lime
2 tablespoons fresh basil, chopped

Salmon:
4 (6-ounce) salmon fillets
1 large Fire & Flavor Cedar Plank, soaked
Fire & Flavor Premium Lump Charcoal 
Lime wedges to serve

FIRST Preheat grill to medium-low heat, about 350°F. In a medium bowl, combine strawberries, shallot, lime juice, and a sprinkle of salt; set aside or refrigerate.

NEXT Sprinkle salmon with salt and freshly ground black pepper. Place soaked plank on grill, close lid, and heat for 3 minutes. Using tongs, flip plank and place salmon on hot side of plank. Close lid and cook for 10-15 minutes until done to your liking, depending on thickness of fish.

LAST Remove plank and salmon from grill (remember salmon will continue cooking after you remove it from grill). Chop basil and avocado and gently fold into strawberry mixture. Spoon salsa over salmon and serve with lime wedges.
