Roasted Cauliflower with Pomegranate Seeds

Prep Time: 10 minutes
Cook Time: 25 minutes
Yields: 4-6 servings

Ingredients:
1 large head cauliflower, about 2 pounds cut into florets
1 tablespoon olive oil
2 ½ teaspoons Fire & Flavor Chicken Rub
½ teaspoon salt
¼ cup pomegranate seeds
Fresh parsley to garnish

FIRST Preheat oven to 400°F. Place cauliflower on a greased, rimmed baking sheet and toss with oil. Season with Chicken Rub and salt and spread into an even layer.

LAST Roast until golden and tender, about 25 minutes. Garnish roasted cauliflower with pomegranate seeds and fresh parsley.
