Roasted Mediterranean Fish

Cook Time: 30 minutes
Yields: 4 servings
Ingredients:
1½ pounds fresh cod, halibut, or other firm, white fish
2 teaspoons olive oil
1½ teaspoons Fire & Flavor Seafood Rub
Juice of ½ lemon
2 teaspoons olive oil
½ yellow onion sliced thin
2 cloves garlic, minced
½ cup white wine
1 (15-ounce) can fire-roasted diced tomatoes
½ cup pitted assorted olives
2 teaspoons capers
¼ cup fresh basil leaves
FIRST Preheat oven to 350°F. Rub fish with olive oil, sprinkle with Seafood Rub, and ½ teaspoon kosher salt. Place fish in 8”x11” glass baking dish coated with olive oil, drizzle with lemon, and set aside.
NEXT Heat oil in a medium skillet set over medium heat. Saute onions and garlic until soft, about 6 minutes. Add wine and tomatoes, bring to a simmer, and cook until liquid is slightly reduced, about 8 minutes. Stir in olives and capers and spoon tomato mixture over fish.
LAST Bake until fish flakes easily with a fork, about 12-15 minutes. Sprinkle with fresh basil leaves and serve.
