Sheet Pan Roasted Fish with Asparagus

Serve this super easy, one-dish meal with fresh bread or roasted potatoes. It makes the perfect weeknight meal that is fresh, flavorful, and healthy.

Asparagus:
1 pound fresh asparagus, ends trimmed
2 teaspoons olive oil
½ teaspoon Fire & Flavor Seafood Rub
½ lemon, cut in half and sliced very thin

Fish:
¾ cup whole-wheat panko breadcrumbs
1/3 cup finely grated fresh Parmesan cheese
1 tablespoon chopped fresh parsley
¾ teaspoon Fire & Flavor Seafood Rub
2 tablespoons melted butter
2 teaspoons regular or low-fat mayonnaise
Lemon wedges to serve

FIRST Preheat oven to 350°F. Coat a rimmed baking sheet with olive oil or line with parchment paper. Place asparagus on baking sheet, drizzle with olive oil and sprinkle with Seafood Rub. Toss and spread into an even layer. Scatter lemon wedges over asparagus and set aside.

NEXT In a medium bowl, combine breadcrumbs, cheese, parsley, Seafood Rub, and butter; season with salt and freshly ground black pepper. Arrange fish fillets over asparagus and lightly brush tops with mayonnaise. Press breadcrumb mixture onto each fillet.

LAST Bake for 12-15 minutes until fish flakes easily with a fork. Serve with fresh lemon wedges to squeeze over fish.
