Salmon Tacos with Corn Salsa
These fresh tacos are perfect for warmer weather. You can make your own guacamole or purchase a good quality one in the fresh produce section of your local market. The tacos are even more delicious when you plank grill your salmon, but either way they are a crowd pleaser!

Cook Time: 15 minutes
Yields: 4 servings
Salmon:
1 ¼-pounds fresh salmon fillets
1 teaspoon olive oil
2 teaspoons Fire & Flavor Salmon Rub
Juice of ½ lime
Tacos:
1 tablespoon butter
4 ears fresh corn, cut off the cob (about 2 cups)
½ red bell pepper, diced
Juice of ½ lime
3 tablespoons fresh cilantro, chopped
½ small red onion, sliced very thin
Fresh guacamole
8 corn tortillas, heated on grill
Lime wedges for garnish
FIRST Heat gas or charcoal grill to medium-high heat. Drizzle salmon with olive oil, sprinkle with Salmon Rub, and season lightly with salt. Grill salmon, flesh side down, for 4 minutes. Turn and cook, skin side down, until just cooked through, about 3-4 more minutes. Remove salmon from grill and squeeze with fresh lime juice; set aside.
NEXT While salmon is cooking, heat butter in a medium skillet set over medium-low heat. Sauté corn and red pepper until corn is tender (about 8 minutes). Stir in lime juice and cilantro and season with salt and freshly ground black pepper.
LAST To assemble tacos, spread 1 tablespoon guacamole onto each tortilla, top with salmon, corn salsa, and red onion. Serve with fresh lime wedges.
